african peanut stew


A crowd favorite! This stew is hearty, savory, very filling, & can feed pretty much everyone at the party. This stew has stuck around for a long time because of how simple it is to make, & the amount of leftovers there are afterward is staggering!


This recipe has an original creator, however because I have been using this recipe for so long I've been unable to find them again. If anyone can identify who posted this recipe originally, let me know & I will give them credit!

Feeds everyone in the vicinity!

Ingredients:

  • 1/4 cup water
  • 1 medium white onion, minced
  • 3 cloves garlic, minced
  • 1 chili pepper, minced
  • 1 tbsp ginger, minced
  • 1 large can diced tomatoes
  • 1 cup crunchy peanut butter
  • 1 tsp coriander
  • 2 cups vegetable broth (or water)
  • 1 large yam, diced
  • 1 can black beans
  • 1 1/2 cups peas
  • 2 cups of vegetables of your choice, chopped ( I used carrots, broccoli, mushrooms, red bell pepper & kale)
  • 1 tsp cayenne
  • 1 tsp cumin
  • 1 1/2 tsp parsley
  • 1 1/2 tsp basil
  • ground black pepper to taste

Instructions:

  1. In a large pot, heat up onions, garlic, ginger, & pepper with the water, saute until soft (about 3-4 minutes)
  2. Add tomatoes, then add peanut butter & coriander
  3. Stir in broth, yam, cayenne, cumin, parsley & basil. Cover & simmer for 10 minutes
  4. Add black beans, peas, and vegetables, stir & cover for another 10 minutes, or until potatoes are cooked through
  5. Add black pepper to taste
  6. Enjoy!
