You heard me right! Savory & warm, this burrito packs a punch with black beans & tofu "scramble", wrapped with vibrant greens in a whole grain tortilla! Herbivores & omnivores alike will rave about this meal for days. 


This meal is not entirely WFPB (whole food, plant based) but it is probably one of the healthiest breakfast burritos you will stuff your face with. In moderation, foods that have been lightly processed (in this case, tofu, re-fried beans, nutritional yeast, tortilla wrap) may definitely be a part of your health journey! It is important to eat an abundance of fresh, unprocessed, whole plant foods as much as you can the rest of the time. 

Serves 2

INGREDIENTS:

(FOR THE TOFU SCRAMBLE)

  • 1 1/2 cups firm silken tofu, drained & pressed, cut into small cubes
  • 4 tbsp hummus
  • 4 tbsp nutritional yeast
  • 4 cloves garlic, minced
  • 1/2 tsp paprika
  • 1 tbsp water (or as needed)
  • pepper to taste 

(FOR THE WRAP)

  • 2 whole grain tortilla wraps
  • 1 can re-fried beans (can also just use 1 can of black beans)
  • 2 cups of veggies of your choice (I used tomato, pepper, mushrooms, & kale)
  • 2 whole leaves of chard
  • salsa to taste (optional)

INSTRUCTIONS:

  1. Water saute minced garlic in a saucepan over medium heat for 3-5 minutes. Slowly add more water if it evaporates before the time is up
  2. In a blender, add your garlic & the rest of the ingredients for the scramble. Use the pulse button to lightly mix together. You want the tofu to resemble the texture of scrambled eggs - chunky & not completely mixed through
  3. Chop your veggies into small pieces. Water saute on medium heat until the mushrooms start to soften (5 minutes). Add in your tofu scramble mixture. Stir frequently until the scramble is heated through. Remove from heat
  4. In a small pot, heat the re-fried beans. If you are using whole black beans from a can, simply rinse them in the sink before adding them to your pot, & heat until warm
  5. To assemble, lay your tortilla on a plate. Place the two chard leaves in the center of your wrap. Add a few scoops of your beans on top, & your tofu scramble on top of that. Top with salsa if you wish. Otherwise, roll up the wrap & serve
