GLUTEN FREE GRANOLA BARS

These babies were the perfect remedy for festival snacking over the summer! Versatile & packed full of nutritionally dense ingredients, these granola bars are loved by all! Just try not to eat them all at once! 


Makes about 12

Ingredients:

  • 1.5 cups ripe bananas, mashed
  • 2 cups rolled oats
  • 1 tsp vanilla extract
  • 1/4 cup hulled hemp hearts
  • 1 tsp cinnamon

*Make a combination of these next ingredients, using 1/2 cup each of 5 total*

  • sliced almonds
  • cranberries
  • raisins
  • cherries
  • filberts
  • walnuts
  • peanuts
  • pumpkin seeds
  • coconut
  • dairy & egg free chocolate chips
  • cacao nibs
  • puffed quinoa

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper
  2. Mash bananas in a bowl. Add vanilla & stir until smooth
  3. Blend the oats lightly in a blender - keeping its texture
  4. Combine the oats & the rest of the ingredients & mix together
  5. Scoop the mixture onto your baking sheet. Press until smooth & even all over
  6. Bake for 25 minutes or until edges turn brown
  7. Let cool for 5 minutes. Remove from baking sheet & cool for another 20 minutes. Cut into bar size (should make 12 total, but more if you want smaller bars, & less if you want bigger bars) 
  8. Eat right away or store in the fridge for up to 1 week (if storing for later, be sure to stack the bars with parchment paper between them so they do not stick together)
  9. Enjoy!

*You can get creative & use any other nut, seed, or dried fruit to make your granola bar taste just the way you want it!*
