Raw Vegan Energy Bites

Perfect on the go, during break at work, between classes, between meals, & great for a pre-workout burst of fuel! Calorie dense & packed with nutritious whole foods. Easy to make & easy to take! What more could you want?


Makes 8 Bites

Walnut Fudgy Energy Bites

Ingredients:

  • 1 cup walnuts
  • 12 pitted dates
  • 1/3 cup raw cacao powder
  • small handful of crushed walnuts to coat the outside

Instructions:

  1. Place walnuts in a blender & blend until very fine
  2. Add the pitted dates & cacao. Blend until a dough forms
  3. Remove from blender & form dough into a ball. Cut the ball into 8 equal pieces. Roll the pieces into a ball shape
  4. Lay the crushed walnuts out on a cutting board. Take each ball & roll them into the crushed walnuts until evenly coated
  5. Place on a baking sheet lined with parchment paper & freeze for at least 1 hour
  6. Remove from the freezer. Enjoy right away and/or store the remaining energy bites into a sealed container & keep refrigerated
  7. Enjoy!

Oatmeal Fudgy Energy Bites

Ingredients:

  • 1 cup dry oats
  • 12 pitted dates
  • 1 tbsp raw almond butter
  • 1/3 cup raw cacao powder
  • raw cacao powder to dust over the bites

Instructions:

  1. Place dry oats in a blender & blend until very fine
  2. Add the pitted dates, almond butter & cacao. Blend until a dough forms
  3. Remove from blender & form dough into a ball. Cut the ball into 8 equal pieces. Roll the pieces into a ball shape 
  4. Place more raw cacao powder into a small bowl. Take each ball & coat entire outside with the cacao
  5. Place on a baking sheet lined with parchment paper & freeze for at least 1 hour
  6. Remove from freezer. Enjoy right away and/or store the remaining energy bites into a sealed container & keep refrigerated
  7. Enjoy!
