VEGAN TACO SALAD


This recipe is so simple, fun, & delicious! A fantastic way to enjoy Taco Tuesdays.

Serves 2

Ingredients:

  • 2 cups romaine lettuce (or any green of your choice)
  • handful of chopped purple cabbage
  • 1/2 cup cooked green lentils
  • 1/2 - 1 cup cooked (or canned) black/kidney beans
  • 1 tbsp each of cumin, basil, chopped onion & lemon juice
  • 1/2 cup tomatoes, chopped
  • 1/2 cup onion, sliced
  • 1/2 cup red bell pepper, sliced
  • 3 cloves of garlic, sliced
  • 3/4 cup corn (frozen or canned okay)
  • chili pepper to taste

instructions:

  1. Cook lentils (approx 1 hour cooking time)
  2. In a small - medium skillet, heat beans. Add cumin. Combine with Lentils. Set aside
  3. In the same skillet, water saute sliced onion, garlic, red pepper & corn for about 5 minutes. Add chili pepper. Set aside
  4. In a bowl, make the salsa by combining tomatoes, chopped onion, basil & lemon juice. Set aside
  5. On a plate, layer: romaine/cabbage, bean/lentil mix, cooked veggies, & salsa
  6. Enjoy!
